Rymill Maturation Release Cabernet Sauvignon

TASTING NOTE
Dark garnet with an edge of brick red. The bouquet displays ripe blackcurrant, mulberry, then dark chocolate and roast coffee beans.

From a ripe and full-bodied vintage, this wine started its maturation process with tannin and fruit concentration to spare. The extended maturation before release has seen those tannins mature and soften to form an elegant balance between the concentrated red fruits and complexity of spice on the palate. Elegance, length, harmony, and depth; a beautiful example of aged Coonawarra Cabernet Sauvignon.

Service temperature: 16-18ºC

Food Pairing: 
Perfectly with appetizers (Lamb skewers, charcuterie, and stuffed mushrooms), finger food (Mozzarella sticks, nachos, and pork sliders), pizza, and chicken & poultry dishes.

This Maturation Release Cabernet Sauvignon is the result of a small quantity of the 2015 vintage cellared at our winery for further maturation in bottle, and only released after careful assessment.

Cabernet Sauvignon is Coonawarra’s pre-eminent grape variety. Parcels of premium fruit are selected, fermented, and then aged in French oak barrels to produce this full-bodied and richly flavored wine.
